First order of business: caffeine fix at Guesthaven Coffee

I know it sounds like a weird thing to say, but coffee is amazing. It’s one of the best things in the world and there’s so much more to it than just drinking it. If you’re wondering what all the hype is about, read on!

Coffee is one of the most popular drinks in the world. It’s an excellent way to start your day, and it can even be used to end a nightcap or as a pick-me-up before bedtime. Coffee comes in many different varieties, each with its own unique flavor profile. You can find coffee roasted from all over the world at your local grocery store—and if you’re looking for something more adventurous, there are some specialty cafes that offer single bean varieties just like Guesthaven Coffee!

Guesthaven Coffee opened its door on April 21, 2022 at 305 Patria De Baguio, Session Road. I have heard of this modest, quaint café from friends but I was skeptic of going to, given that new cafes almost offer the same commercial-grade coffee, I was in for a surprise. I gave Guesthaven a visit with a friend on the last Saturday of July but we were stopped by the security guard and was told it’s close on Saturdays. I intended to go alone the week after and I was treated to a Paris-like experience. With a comfortable jazz music on the background, I ordered my coffee.

I asked for a pour-over and was given two choices; Atok and Shilan. Since I am well familiar with Premium Benguet Arabica taste profile, I went for Atok to compare. Barista happily took out those pour-over round paraphernalia and she was particular about the counting, a great sign of good coffee I must say!

The taste profile didn’t disappoint! The washed-processed beans have coffee notes of citrus fruits and floral hints. For extreme coffee lovers, I highly recommend their pour overs.

I went on to another visit followed by three more. Those visits, I chose Shilan premium Arabica. The barista recommended siphon for my choice.

Siphon coffee is kind of like the coffee equivalent of a physics experiment: it requires close attention and quick, careful technique. But once you get the hang of it, the reward is wonderful. You use a siphon to brew coffee by immersing the grounds in hot water and then drawing off the brew without letting any of the grounds rest on the bottom of your cup. It’s just plain fun and the coffee that you get from a siphon is nothing short of delicious. Full immersion brewing brings out coffee’s intense fruity flavors — especially with dry processed beans — and standard cloth filters yield a cup so clean. When it comes to sediment, siphons are the polar opposite of metal-filtered presses. We love using them paired with butane burners because they offer control over many brewing variables — making them an excellent choice for coffee geeks and control freaks alike!

So, the next time you’re feeling stressed or a bit down in the dumps—grab yourself a cup of coffee (or two). And then take comfort from knowing that it will probably taste as good as you remember.
